I've killed annoying housecarls/stewards, and used their souls to power enchanting stations. If I play a "necromancer", I use to collect dead bodies (that won't disappear) in some basement, for using as dead thralls - or just for decoration. In Skyrim it's a bit "better", if that' what you want.
